Tomorrow is Thanksgiving – a time for family and friends to enjoy great food paired with even better wine! Whether you choose to offer a selection of varietals, or pair one bottle with each course, it’s important to remember that how the wine is stored is just as significant as how it is served.

White wines are best stored at a consistent temperature of 52-57°F. A few hours before serving, lower the temperature to 45°F and remove the wine from the fridge just before drinking.

For your Thanksgiving fete, look to Riesling, Sauvignon Blanc or a delicate Pinot Grigio, to complement and accompany a juicy bird with all the fixings.

Riesling, a white wine that usually includes flavors of apple, apricot and honey, offers a significant pairing edge with dishes that are spicy, salty, or sweet.

Sauvignon Blanc is known for its crisp, citrus-based flavors and is a great pairing candidate for turkey and mashed potatoes.

Pinot Grigio is capable of handling heavy, rich flavors, making it an excellent choice for pairing with high-fat dishes like scalloped potatoes and puff-pastry appetizers. It also helps provide balance to dishes with onion and garlic.

If your preference is for red wine, preparation will require a little more attention. Reds are best stored in a dark space, at a consistent temperature of 59-65°F and preferably on their side. Minimum one hour before serving, decant the wine and allow it to breathe.

Shiraz, Zinfindel and Pinot Noir are synonymous with Thanksgiving, and serve as the perfect complement to the meal.

Shiraz brings a spicy edge and meaty character to the table. It’s bold, peppery notes partner well with herb-infused stuffing, turkey and mixed berry pies.

Zinfandel is a great choice for those looking for a hearty glass of wine with capacity to accommodate spice, bitter and sweet flavor profiles. Pairing Zinfandel with your main course will match the traditional flavors of your side dishes.

Pinot Noir is a classic wine choice due to its subtle earthy undertones and pairs well with your entire Thanksgiving meal, from the appetizers to your famous homemade pumpkin pie dessert.
