Ingredients (makes 12 medium-sized pancakes):
1 ½ cups flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
¾ teaspoon baking soda
¾ teaspoon salt
1 teaspoon ground cinnamon
Pinch of nutmeg
¾ cup pumpkin puree
2 eggs
3 tablespoons butter, melted
1 ¼ teaspoons vanilla
1 ½ cups buttermilk
Instructions:
Mix your dry ingredients together – flour, sugar, salt, baking powder, baking soda, and spices. In another bowl, combine your butter, pumpkin, buttermilk, eggs, and vanilla. Fold this mixture into the dry ingredients.
On medium-low heat, cook your pancakes on a greased skillet, using about 1/3 of the batter per pancake. Cook for 1-2 minutes on each side, or until pancakes turn golden brown. We recommend greasing your skillet throughout the cooking process.
